Playing Catch Up

I feel like I haven’t posted in a while. To be honest, it’s not because I’m too busy. I just kept putting of each post until it got to the point where a week+ went by. Ah!

But don’t worry I haven’t gone anywhere 😉

There’s no getting rid of me!

Lately, I have gone out and enjoyed some adult beverages.

Along with drinking alcohol, I have consumed slightly healthier options.

Such as Kristen’s Green Monster Smoothie.

Holy Spinach!

I love blenders, especially ones that work very efficiently!

I had the idea to pour this smoothie into a bowl thanks to Kath!

Here is one of her delicious SIAB’s (Smoothie in a bowl).

I’ve also had a bunch of salads.

This one consisted of spring mix, wild blueberries, walnuts, feta, radishes, squeeze of lemon, pepper & balsamic dressing.

I enjoyed this the day after drinking a few too many cocktails, hence the huge jug of lemon water in the back.


And finally.

Last but not least!

The recipe I put to use tonight that gave me the push to post:

Pumpkin Iced Cookies.

Just make sure you have people to share them with.

Although it’s hard to let them go, it’s for the best…

Eating three trays of cookies in one night is never healthy.


The best part – the icing.

I mean, what does icing NOT taste good on?

The house was smelling like Fall.

The weather is pretty Autumn-like so why not!?

Pumpkin cookies taste great any time of year in my eyes mouth.


  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 1/2 cups white sugar
  • 1 cup canned pumpkin puree
  • 1 egg
  • 1 teaspoon vanilla extract


  • 2 cups confectioners’ sugar
  • 3 tablespoons milk
  • 1 tablespoon melted butter
  • 1 teaspoon vanilla extract


  1. Preheat oven to 350 degrees F (175 degrees C). Combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, and salt; set aside.
  2. In a medium bowl, cream together the 1/2 cup of butter and white sugar. Add pumpkin, egg, and 1 teaspoon vanilla to butter mixture, and beat until creamy. Mix in dry ingredients. Drop on cookie sheet by tablespoonfuls; flatten slightly.
  3. Bake for 15 to 20 minutes in the preheated oven. Cool cookies, then drizzle glaze with fork.
  4. To Make Glaze: Combine confectioners’ sugar, milk, 1 tablespoon melted butter, and 1 teaspoon vanilla. Add milk as needed, to achieve drizzling consistency.

I followed this recipe exactly and there are zero complaints! Well, besides the fact that I cannot stop :X Next time I make them…chocolate chips & maybe oats/pecans will be involved.

They are very soft and fluffy, sort of like muffin tops!

I am SO making these for Thanksgiving/Halloween next year!


Oh my gosh! Guess what??? I signed up for my first road race – The 15K Boilermaker! Over nine miles this summer, I can SO do this. I will make my way home from NYC for the weekend to run my heart out.

Motivation to run at its best.

SO excited.

It’s the most wonderful time of the year…

…according to my plate at least.

Egg & Greens Scramble w/added mushroom and an added cherry pepper (gotta have more spice).

I would’ve added some red pepper flakes but I made this for my mother as well…she’s not as trained in the spicy area so I decided to take one for the team.

I’m so nice.

Clementines are becoming a ‘I must have one (or two) per day or I will not survive’ type of food lately.

I don’t mind my new obsession.

I have to eat them cold though, I feel that way about apples & most other fruits too.

SO joosayyy!

Then I had dessert.

Oatmeal raisin cookie…thank you, Walmart.

What? You don’t eat dessert after breakfast? Pshh.


Happy First Friday of 2012 😀

The Lotus Garden

Tonight my Mom and I went out to dinner. The Lotus Garden is a restaurant in Utica, NY and I would say that this place definitely has top notch Asian food. Especially for this area.

We ordered two entrees and shared them both.

But first, the appetizer.

It’s BYOB so we brought (and finished) a bottle of red.

The calamari was absolutely delicious.

I ordered the special with chicken:

Chicken, red & green bell peppers, bamboo, baby corns, pineapple – all in a coconut/lemongrass sauce.

At this restaurant, you choose your own heat index. It’s 1-5, 1 being mild and 5 being hot.

I chose 3 even though my mom recommended 2 because of previous dishes she’s had here. I’m not sure if it was the wine, but this dish was not spicy to me at all! I liked this but I liked what my mom chose even better.

Good thing we shared them both.

The funny thing is, she was so worried about mine being too spicy for her – but what she ordered was waaaay spicier than mine…and it was called “Lotus Garden Sweet Shrimp.” SWEET. No, more like spicy. The perfect spicy.

Thank GOD we shared.

After we headed to Walmart to get ice cream. We ended up full out grocery shopping. Food for days, I was smiling big as we loaded up!


It’s Complicated is on and I just enjoyed some ice cream.

Tomorrow is Friday and I want to go out but I also want to feel 100% great on Saturday (NYE). So we’ll see what happens, it’ll probably be a chill night.

Seriously today I ate all meals out. Mostly.

I woke up at about 10am and was hungry of course. My sister, Hannah, texted me at 11am before I even got up out of bed telling me that we were going to Bennu (a nearby wonderful restaurant) for lunch.

I had some yogurt to hold me over…with PUMPKIN!

Mommy bought this for me after I told her I wanted to make some pumpkin oatmeal! How nice she is! Thank you, Sandy. I added it to yogurt and not oatmeal because oatmeal fills me up and I didn’t want to be filled up for lunch, ya digg?

  • Oikos 0% Yogurt
  • Pumpkin
  • Blueberries
  • Salted Almonds & Pecans
  • Honey
  • Packet of Splenda (needed more sweetness)
  • Tons of Cinnamon

A couple hours pass and it was time for lunch.

We ordered Sweet Potato Fries with the amazing zingy dip for the table.

Anything spicy catches my eye. What happened when the waiter brought my food you ask?

“Alright here I have the Hot Tamale.”

I said, “That’s mine, thank you.”

He replies, “You are what you eat!” and then ran off.

Thanks waiter dude.

My sister was embarrassed that I kept taking picture of our food. She’s just jealous, obviously.


Fast forward to Dinner with my best fraaand, Sarah …Sushi it is!

I ordered a salad to start (not pictured because I forgot, silly me), some random sushi plate (above) along with a Salmon Skin Role (below).

I am so thirsty after this meal, musta been real saltaay!

We had no problem demolishing.

Alas, we always leave room for dessert.

Our favorite: MOCHI ICE CREAM!

They are like pillowy ice cream pods (PICP???).

PICP…nice one.

You haven’t lived until you have tried this. Next time you got out for sushi, get this. TRUST.


I may have had some more snackies later on. I feel as though I consumed too much sugar and salt today. That’s whatchya get for eating out, especially the sodium.

Tomorrow is a new day and I plan on going to the gym & eating well. I want to run so badly but the weather suuuuucks.


We bought New Years dresses at the mall today. Who knows where we’ll be, but Sarah and I are determined to find something extravagant to attend…haha. Suggestions?

Christmas 2011

I hope everyone enjoyed Christmas this year! I did.

We started out at home by opening prezzies and playing with them for a couple hours. SANTA BROUGHT ME A NEW CAMERA! I was surprised to say the least. I was obnoxious with it all day long.

Then we headed to Grammy & Grandpa’s house for a lovely brunch & more prezzies.

I was satisfied with this delicious appetizer spread. Shrimp will always have my heart.

Then the table was set and the food was comin out!

I was ready.

Ham, Scalloped Potatoes, Green Bean Casserole, Broccoli, 5 Cup Salad on the side. OH and that’s mustard in the middle (GREY POUPON… I love that I appreciate good mustard these days).

Twas delish.

We then opened presents while I ate about 2,000 cookies.

They were sitting in front of my face, I had to.


SO light & airy. Perfectly sweet.

I have always been a lil messy hehe!

Loved the star one’s too, the shape AND the taste yummy.

OKAY they were all amaze! No complaints here.

After presents…MORE dessert!

Afterwards, we headed to see my other Grandma (Italian-style) and I can’t lie… I ate some ravioli & meatballs and some random goodies. Definitely couldn’t resist (Grandma’s famous sauce is irresistible).

And there you have my lovely food-filled Xmas.


But have no fear, I went for a nice 4.7 mile run today. It was too cold and was pissed at myself in the beginning because it was borderline torture. But once I got into my groove, the runner’s high hit and I was good to go. I could’ve definitely ran even more! BUT I didn’t.

I am feeling headachy and just yucky right now. Could it be… jetlag hitting me two weeks late? No. Maybe? But I just hope that’s what it is because I seriously do not want to be sick. PLEASEEEEEE!

I hope no one is experience PCD (Post Christmas Disorder). Do you like my acronyms? It’s my new thing. Fortunately, PCD is not affecting me this year because I’m just happy looking forward to getting back to NYC (New York City….ha) for my last semester of college. I love having something to look forward to. But first, New Years…? Yeah, no plans as of right now. I’m hoping that changes asap. 2012 is almost here, unbelievable.

I’m Baaaaack!

Hi! I made it back safe & sound from Australia a week ago. Is it weird that I am not feeling jet-lagged at all? It’s a 14 hour time difference, what’s going on? Maybe I’m SuperWoman or something…probs.

ANYWAYS it’s nice to be back, it’s like I never left. Except it is because the last time I was home it was summer and now BAM it’s winter…although it’s raining!? WTF! Gimme some snow. That’s okay though because it means it’s a little warmer and I got a couple runs in outside.

Outside running > indoor running. The natural hills & cars driving by is motivation in itself to keep going. Instead of running inside on a treadmill like a mouse in a wheel. Ick.

Running is definitely necessary with all of the cookie-making that’s been going on.

OH and P.S. I still have no camera. UGH! Therefore, my Blackberry camera will have to do for now.

These cookies I found from Kristin here. She is one of the bloggers I religiously follow – check out her website, she’s great!

They came out of the oven & it was love at first site! Love ’em! Now they actually taste like brownies, which is definitely not a bad thing. They are moist (do you hate that word? ‘Cause I love it…) and nice ‘n chocolaty. AND very easy to make.

I made a bunch more cookies including meringues! I am in love with meringues in general and let me just tell you – I knocked these babies out of the park.

  • 4 Egg Whites
  • 3/4 Cup Sugar
  • 1/4 Tsp Pure Vanilla Extract
  • 1/2 Cup Semi-Sweet Chocolate Chips
  • Optional Food Coloring
1. Preheat Oven 350ºF
2. Beat Eggs until stiff.
3. Gradually add Sugar/Vanilla/Food Coloring
4. Fold in Chocolate Chips
5. Plop tablespoon (or whatever size you’d like) of mixture onto baking sheets covered w/foil or parchment paper
5. Place cookies into oven & immediately turn oven OFF.
6. Let sit for at least two hours (hard, I know)
7. Take out in a few hours & enjoy!

OKAAAY I know…these are pink. I didn’t add enough red dye but they are still adorbs. Idea for Valentine’s Day? I think YES. The next batch I did white with green & red sprinkles, but I ended up baking them for too long and turned a slight orange color. Still very very delicious. See the chocolate chip hiding in there?

I love the crunchy outer shell and the soft, delicate center. They would be good without the chocolate chips, but I like them with! The more chocolate, the better! 😉


And as for breakfast this morning, I finally tried Gingerbread Oatmeal.

I just threw in a pot: oats, flax, water, milk, cinnamon, ground ginger, ground clove, molasses, pinch of salt, and the rest of an energy mix that mostly consisted of granola and cranberries. I didn’t measure anything, I like to eyeball.

I decided something was missing (sweetness) so I added brown sugar. There ya go. Exactly what it needed! It was pretty good, I want to try pumpkin oatmeal next. Can you tell I LOVE this time of year?


THREE days until Christmas. Unbelievable. I hope you are getting in all of your last minute shopping 🙂 ! I still have a few things to conquer GAH.



Beans Beans they’re good for your heart…

I was starving at 4pm. And I don’t do snacks well, at least not when I am ravenously hungry.

I grabbed part of my Fruit & Nut “granola bar” and shoved it into my mouth. I cannot believe I actually had the patience to take a picture before demolishing. Impressive. Oh and I also ate a Gingernut Cookie. They were crying out for me in the cabinet.

Obviously I was not nearly satisfied so I decided it was time for dinner. And that I just happened to have my dessert beforehand.

Mmmm! Anything with sauteed onions and garlic is a winning dish to me! This contains:

  • Lentils
  • Cannelinni Beans
  • Frozen Peas & Corn
  • Chopped Tomato
  • Chopped Onion
  • EVOO, Salt, Pepper

I didn’t even have the patience of cooking the beans long enough. It all tasted wonderful though. Mighty Ducks happened to be on TV.

Then I decided it needed a little spice (Siracha, obvs.):

Oh yeah that’s what I’m talkin about!

After I tried the apple/mango mixture I made earlier in a panic to make the mango taste better (second dessert?). Eh it was better but not great. Darnit. Maybe I’ll try something different with it tomorrow.

I have a headache and it’s raining. I just want to go to sleep but it’s only 5:15pm. LAME.

Cheesecake for Breakfast

That’s right. Classic Cheesecake for brekky.

Along with some chocolaty, nutty granola.

Looks like it’s stickin’ together like an actual bar!!!

Ah but then it crumbled as I took it out of the container. Not a problem.

I also added heaps of flax, almonds and cinnamon (even though the granola contains all of these ingredients). I wanted more.

After satisfyingly creating my concoction, I turned on the news and enjoyed in my swimsuit. To be clear, I enjoyed my yogurt. NOT the news – I hate hate hate the news but it’s the only thing that’s on in the morning (we get approx. 5 channels).

Then I ate half of this Pink Lady:

I only ate half because I don’t love it. These apples were on sale, no wonder. Darnit! Maybe I’ll cook up the rest on the stove with some cinnamon. Sounds good.


P.S. I said I was watching the news in my swimsuit because the sun is out and shining bright. It’s also very hot (about 80°F). I laid by the pool for about two hours and dove into the pool a few times because I was sweating horrendously. I might consider that my workout for the day. Ya know…cuz I sweated so much 😉

Warm Summer Salad

The mangos I bought yesterday excite me! I wanted to try something interesting with them.

So I cut up half of one.

PRETTY! Just slice vertically & horizontally without cutting the peel. Then the cute little squares come off pretty easily…I scraped them off with a spoon.

I looked in the fridge and thought, “Sure! I’ll eat this bad boy with tomatoes and onions.”

So I ended up making a salad: Lettuce, Basil, Tomato, Mango, Onion.

I cut up the mango, cherry tomatoes, and onion and put them in a container in the fridge to marinate in EVOO, lemon juice, salt & pepper. Definitely eatable just like that. I tried it – definitely good.

But I didn’t feel like eating raw onions, so I sauteed everything together for about two minutes. Nice ‘n warm.

Siracha Sauce was obv. necessary. It made it even yummier. The warm mangos definitely tickled my fancy. Tomorrow I think I’ll have the other half nice and fresh with cottage cheese or just by itself. I like it!


For dessert, I went full out.

Balls to the wall, if you will.

Prepare yourselves.

Seriously, you might start drooling.




HA. Just kidding.

I ate three prunes, but let me tell you…they are so good.

I also had three more earlier in the day. OH and I also tasted ate at least 1/4th of my Chocolate Peanut Butter Granola Bars. Yum, nice flava. Except…..they are definitely granola status… minus the “bar.” I can handle it. I’m planning on having some of this delightful granola with my yogurt for breakfast.

I know, I’m sick like that. The second I’m done with one meal…I start dreaming about the next.

That’s what I’m here for though, right!?!?

Comfort Soup

After my delicious oatmeal incident this morning, I went to the gym. I warmed up on the treadmill for about ten minutes then did a mini circuit rotating between lunges, free weights and abs. I finished off with more treadmill and a good stretch.

Stretching is my favorite part! I feel my flexibility getting better which feels oh so good! Can you touch your toes? 😉


On the way home on the bus I was day dreaming about avocados. So I incorporated the other half from last night into my salad for lunch.

It was like a fiesta salad! Similar to last night’s …the flavor combo gets me every time!

  • Chopped Lettuce (Salad Base)
  • Sauteed Zucchini and Onion
  • Half of a Chicken Burger
  • Half of an Avocado
  • Tzatziki
  • Hot Siracha Sauce
  • Sea Salf & Lemon to taste

Seriously, fresh squeezed lemon has been the best salad dressing for me lately. Paired with tzatziki, there’s no reason to add anything else! Besides Siracha of course.


Speaking of Siracha, I added some into my delicious dinner as well.

Yep, I made soup. Definitely the perfect day for it! It’s like 60 degrees and it’s summer…odd. Not used to it but I think after the rain passes in a few days it will be back to scorchingly hot.

This delectable comfort soup contains:

  • Sauteed Onion and Garlic
  • Lentils
  • Water
  • Chili Powder
  • Sea Salt
  • Romaine Lettuce
  • Basil

I’m running low on food (I leave in 10 days and don’t want to buy too much) but the mixture of these simple ingredients was a definite success. I give it an A! It’s very healthy and very very yummy.


To cool down for dessert I put some yogurt in the freezer for about 20 minutes.

I of course topped it with Goji Berries, Almonds, Coconut, and Cinnamon. My favorite.

You can kind of see (thanks to my magnificent phone camera) how its a bit frozen.


After enjoying my yogurt, Steph and I ventured out into the chilliness for a walk. It started misting on our way back and I had some serious goosebumps (I wore shorts and a t-shirt, bad decision). I ate an apple and tahini as we watched a few re-run episodes of The Big Bang Theory. If you’ve never seen it, do yourselves a favor! It’s one of my all-time favorite shows.

Well it’s past 9pm, therefore past my bedtime. Haha just kidding…well, not really. I’m very tired and have a slight headache. Time to sleep it off.
