HEY!

Last night I ended up eating a burger AND  hot dog (sans buns) and it left me feeling a bit overloaded in the calorie and fat range. So this morning I wanted a non-fat/low-cal meal.

[ Salsa atop egg whites atop mixed greens…I SO wish I had hot sauce đŸ˜¦ ]

Even though I was not up for a run yesterday, I ended up doing an at home workout.

SO many squats, frontwards and backwards (3 sets of 20 ea. way holding 8lb weights)

and also some biceps/triceps/shoulders.

My legs are killer today. You know that kind of sore that when you sit down and stand up it’s just about unbearable? That kind of sore that makes the stairs seem impossible. That is me today.

And 2 of these.

I’m about to go for a nice run to loosen up my legs.

I remember when I was in Australia and went to surf camp for a weekend, I was the sorest I had ever been in my life I think. It lasted for about a week haha because it was muscles I never even felt before.

While I was recovering, I kept stretching and stretching but the only thing that actually helped was doing some cardio. So I did some jogging and it helped immensely. This is why I feel the need to run it out right now!

Breakfast for Lunch

Seeing as I had lunch for breakfast, I was actually craving breakfast at lunchtime.

Honey Nut Cheerios, Banana, Almond & Cherry Granola, Chia Seeds, Cinnamon, PB, Skim Milk

Hit the spot.

One of my favorite breakfasts as a kid was cheerios, banana, milk and TONS of sugar.

I will always love the combo of banana & cereal. But no longer with 6 tablespoons of sugar on top. Instead – cinnamon and some naturally sweet ingredients. Wow I am like a grown up or something.

I really want to go for a run but my legs are aching incredibly bad. Rest it is.

Brekky Salad…again.

I’m not sure what has gotten into me. A salad…for breakfast…again?

I woke up and wanted eggs, looked in the fridge and remembered I had boiled a couple last night. I couldn’t pass them up so what did I do? Make an egg salad brekky.

Iceberg lettuce, 1/2 vine tomato, two hard boiled eggs (one w/yolk, one without), chopped scallions, celery, homemade dressing

The salad dressing consisted of spicy brown mustard, EVOO, red wine vinegar, salt & pepp.

I know, it’s weird to have a salad for breakfast. But it was almost 11am by the time I ate so it was almost like a brunch. Yeah, that’s more acceptable.

I also had prunes and black tea. I swear I am only 22 years old.

I’m BACK!

It’s been way too long since I have posted but…here I am!

Since I have been at school (last semester & now graduated YAY), I have had my ups and downs. I mostly was too busy to blog on a daily basis and I also lived in a dorm with the most horrendous lighting. I didn’t even have access to a window so I decided I wasn’t going to half-ass it. And since it was my last semester of college – I went out, had lots of fun but could have definitely been healthier in general. Now it’s time to get back on track.

SO I am back at home now with windows, natural lighting and of course lots of time.

For breakfast I had a salad.

YEP. A salad.

Spring Mix – Sauteed Tomatoes & Onion – Egg White & Whole Fried Egg – Seedless Raspberry Jam

I have to say, I enjoyed this immensely. The combination of egg + jam is perfection. No salad dressing needed with the jelly and egg yolk.

I also enjoyed a 60 cal pack of prunes. I love prunes.

I then went for a run. I’m training for a 15k Road Race (The Boilermaker) which takes place in July. My joints are killer but I have been trying to push through it. I am thinking about taking Glucosamine as a supplement. Maybe that’ll help.

After my 3.65 run, I wanted beans.

So I had some delicious vegetarian baked beans.

Why do my friends make fun of me for loving beans? They are good for your heart…

Haha anyways, I also made myself some Iced Powerfruit Green Tea. I used a Lipton packet, brewed a cup and then put it in the freezer to cool it down. Then poured it over ice. SO refreshing.

Oh and look! In a Boilermaker cup…how appropriate.

Then – a banana & PB.

Gotta have some heat

For lunch, chicken salad sounded perfect.

Especially after the HUGE sugary brownie I inhaled right before.

I don’t wanna talk about it.

Let’s talk about healthy salads.

  • Lots of Spring Mix
  • Chicken Salad
  • Crushed Kettle Potato Chips
  • Chopped Hot Cherry Peppers
  • Balsamic Dressing

Of course I needed some heat.

I crave spicy and it’s beginning to take a toll on me.

I honestly haven’t noticed a difference until I started having chest pains while running.

My doctor had me start Prilosec OTC and it’s helping.

Therefore – these chest pains seem to be the result of the increased levels of spiciness in my diet within the past 6 months.

Gahhh I just cannot help myself!!!

Whatever these peppers aren’t that spicy…

Good salad. And I am now eating a clementine…again.

God I need to stop eating too many treats! I am not talking about clementines, but the dang brownies & cookies. Once I get back to school, I will be away from these never-ending snacks. Thank GAWD.

I will attempt to restrain myself from another pumpkin cookie today, but I’m not sure I have the willpower. Someone help me!

It’s warm out so I should go for a run, but I’ve been so consumed with packing all day to go back to NYC on Sunday. Once I start being productive, it’s hard to stop. And once I stop – there’s no starting again.

I just found two large bottles of hot sauce I bought to bring back with me…haha…

Wanna know what the best feeling is?

Feeling satisfied.

And after this breakfast, I felt nothing but pleased.

I’m sure you can see why.

  • Oatmeal (Oats, flax, blueberries, raw chopped almonds, half of a ripe banana, goji berries, cinnamon, pure vanilla extract, pinch of salt, natural crunch peanut butter)
  • Iced Pumpkin Cookie
  • Clementine
  • Coffee

This cookie alone screams indulgence.

For good measure – some juicy fruit.

Love these suckers.

I highly recommend creating this oatmeal.

Even if the only added ingredients were banana & pb.

So good & so filling!

The banana adds fluffiness.

Playing Catch Up

I feel like I haven’t posted in a while. To be honest, it’s not because I’m too busy. I just kept putting of each post until it got to the point where a week+ went by. Ah!

But don’t worry I haven’t gone anywhere đŸ˜‰

There’s no getting rid of me!

Lately, I have gone out and enjoyed some adult beverages.

Blueberry Stoli w/Selzer and Lemon & Lime

Saranac Beer. When in Utica...

Along with drinking alcohol, I have consumed slightly healthier options.

Such as Kristen’s Green Monster Smoothie.

Holy Spinach!

I love blenders, especially ones that work very efficiently!

I had the idea to pour this smoothie into a bowl thanks to Kath!

Here is one of her delicious SIAB’s (Smoothie in a bowl).

I’ve also had a bunch of salads.

This one consisted of spring mix, wild blueberries, walnuts, feta, radishes, squeeze of lemon, pepper & balsamic dressing.

I enjoyed this the day after drinking a few too many cocktails, hence the huge jug of lemon water in the back.

Last but not least!

The recipe I put to use tonight that gave me the push to post:

Pumpkin Iced Cookies.

Just make sure you have people to share them with.

Although it’s hard to let them go, it’s for the best…

Eating three trays of cookies in one night is never healthy.

Crap.

The best part – the icing.

I mean, what does icing NOT taste good on?

The house was smelling like Fall.

The weather is pretty Autumn-like so why not!?

Pumpkin cookies taste great any time of year in my eyes mouth.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 1/2 cups white sugar
  • 1 cup canned pumpkin puree
  • 1 egg
  • 1 teaspoon vanilla extract

Icing

  • 2 cups confectioners’ sugar
  • 3 tablespoons milk
  • 1 tablespoon melted butter
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, and salt; set aside.
  2. In a medium bowl, cream together the 1/2 cup of butter and white sugar. Add pumpkin, egg, and 1 teaspoon vanilla to butter mixture, and beat until creamy. Mix in dry ingredients. Drop on cookie sheet by tablespoonfuls; flatten slightly.
  3. Bake for 15 to 20 minutes in the preheated oven. Cool cookies, then drizzle glaze with fork.
  4. To Make Glaze: Combine confectioners’ sugar, milk, 1 tablespoon melted butter, and 1 teaspoon vanilla. Add milk as needed, to achieve drizzling consistency.

I followed this recipe exactly and there are zero complaints! Well, besides the fact that I cannot stop :X Next time I make them…chocolate chips & maybe oats/pecans will be involved.

They are very soft and fluffy, sort of like muffin tops!

I am SO making these for Thanksgiving/Halloween next year!

Oh my gosh! Guess what??? I signed up for my first road race – The 15K Boilermaker! Over nine miles this summer, I can SO do this. I will make my way home from NYC for the weekend to run my heart out.

Motivation to run at its best.

It’s the most wonderful time of the year…

…according to my plate at least.

Egg & Greens Scramble w/added mushroom and an added cherry pepper (gotta have more spice).

I would’ve added some red pepper flakes but I made this for my mother as well…she’s not as trained in the spicy area so I decided to take one for the team.

I’m so nice.

Clementines are becoming a ‘I must have one (or two) per day or I will not survive’ type of food lately.

I don’t mind my new obsession.

I have to eat them cold though, I feel that way about apples & most other fruits too.

SO joosayyy!

Then I had dessert.

Oatmeal raisin cookie…thank you, Walmart.

What? You don’t eat dessert after breakfast? Pshh.

Sweet & Savory flavors are the best.

Plus a clementine on the side.

Delectable to say the least.

I used sugar free raspberry jam & microwaved egg whites.

Smushed in between a whole grain sandwich thin.

Plus green tea, obvs.

But seriously, if you are bored with your breakfast – TRY THIS!
